From the 2026 season, the culinary direction of LA GUARDIA Hotel has been entrusted to Alessandro Rossi, a Tuscan chef whose distinctive culinary journey began with the achievement of his first Michelin star in his early twenties. Since then, he has developed a refined and rigorous interpretation of contemporary Italian cuisine.
His philosophy is rooted in seasonality, local sourcing, and the honest expression of each ingredient. Sustainability, simplicity, and respect for the product define his approach, allowing every dish to convey the essence of the territory through precision, balance, and authenticity.

Executive Chef · Niccolò Anello
The day-to-day leadership of the kitchen is entrusted to Executive Chef Niccolò Anello, who previously worked alongside Alessandro Rossi as his sous chef and now brings his culinary vision to life at LA GUARDIA.
Despite his young age, Niccolò has already built an impressive professional background in some of Italy’s most celebrated Michelin-starred restaurants, including Da Vittorio (Three Michelin Stars), Magnolia by Alberto Faccani(Two Michelin Stars), and most recently Gabbiano 3.0 (One Michelin Star).
